What if I don't know my exact sobriety date?

Choose an approximate date. The precision of the number matters less than the practice of tracking. You can also choose a meaningful date, such as the day you made your decision or began treatment.

Should I share my sobriety date with others?

That's entirely your choice. Many people in 12-step programs share it openly. Others prefer to keep it private. There is value in accountability through sharing, but also value in making this a personal commitment that doesn't depend on external validation.
